Homemade muesli bars

You'll never buy store bought muesli bars again.

These homemade bars flavoured with apricot and coconut are soft, sweet and chewy with just the right amount of bite.
You can change up the flavours using different nuts, seeds and fruits however you like.

Ingredients

  • 100 grams butter, chopped
  • ⅓ cup (75g) firmly packed brown sugar
  • 2 tablespoons honey
  • 2 cups (180g) rolled oats
  • ½ cup (75g) finely chopped dried apricots
  • ⅓ cup (25g) desiccated coconut
  • ¼ cup (35g) sunflower seeds
  • 2 tablespoons pepitas (pumpkin seed kernels)
  • ½ teaspoon ground cinnamon

Method

    Preheat oven to 180°C. Grease a deep 20cm square cake pan; line base and sides with baking paper, extending the paper 2cm above the edge.

    Stir butter, sugar and honey in a medium saucepan over low heat until sugar dissolves. Stir in remaining ingredients.

    Press mixture into pan. Bake 20 minutes. Cover with foil; bake for a further 25 minutes or until firm to touch.

    Mark into 10 bars while warm; cool in pan. Cut when cold.
