A fragrant and bright Moroccan salad with crisp carrots and an orange flower water dressing.

Moroccan-style carrot and orange salad
  • 500 gram small carrots, peeled
  • 2 small (360g) oranges, peeled, segmented
  • 1/2 small (40g) red onion, sliced
  • 1/4 cup fresh coriander leaves
  • 1 tablespoon orange flower water
  • 2 tablespoon caster sugar
  • 2 tablespoon lemon juice

    Cut carrots into thin strips.

    Combine carrots and remaining ingredients in a large bowl. Cover; refrigerate for two hours to allow flavours to develop.


Best made on the day of serving. There are several different brands of orange flower water available, all with varying potency. Start with half the quantity stated in the recipe, taste, then add more if required.
