Mixed vegetable fritters with smoked salmon

These vegetable pancakes are topped with smoked salmon and covered in a minty, herb yoghurt - perfect for a wholesomely light lunch, brunch or snack.

Ingredients

Mixed vegetable fritters with smoked salmon
  • 200 gram pancake shake mix
  • 1 cup frozen mixed vegetables
  • 1/2 cup grated tasty cheese
  • 2 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 200 gram smoked salmon slices
  • rocket salad, to serve
Cumin and mint yoghurt
  • 1 cup natural yoghurt
  • 2 tablespoon chopped mint
  • 1 teaspoon ground cumin

Method

    Prepare pancake mix following packet instructions.

    Pour into a bowl and add vegetables, cheese and juice. Season to taste.

    Heat oil in a large frying pan on medium. Cook 4 pancakes for 1-2 minutes, until bubbles appear on surface. Turn and cook for a further minute. Keep warm while cooking remaining pancakes.

    To make cumin and mint yoghurt: In a small bowl, combine yoghurt with mint and cumin.

    Serve fritters topped with salmon and yoghurt, and accompany with a green salad.
