Ingredients

Mixed mushrooms and chicken with crispy noodles
  • 1 tablespoon peanut oil
  • 1 kilogram chicken thigh fillets, sliced thinly
  • 2 clove garlic, crushed
  • 8 green onions, coarsely chopped
  • 200 gram shiitake mushrooms, coarsely chopped
  • 200 gram gai lan, coarsely chopped
  • 100 gram oyster mushrooms, coarsely chopped
  • 1/3 cup (80ml) vegetarian mushroom oyster sauce
  • 100 gram enoki mushrooms
  • 50 gram fried noodles

Method

    Heat oil in wok; stir-fry chicken, in batches, for about 5-15 minutes or until just cooked through.

    Return chicken to wok with garlic and onion; stir-fry for about 2-3 minutes or until onion softens. Add shiitake mushrooms; stir-fry for about 2 minutes or until tender. Add gai lan, oyster mushrooms and sauce; stir-fry for about 2 minutes or until vegetables are tender.

    Remove from heat; toss in enoki mushrooms and noodles.

Notes

Fried noodles, also known as crispy noodles, are used in sang choy bow and chow mein. They can be found in supermarkets, usually in 50g or 100g packets, already deep-fried.
