Ingredients

Method

1.Heat oil in wok; stir-fry chicken, in batches, for about 5-15 minutes or until just cooked through.
2.Return chicken to wok with garlic and onion; stir-fry for about 2-3 minutes or until onion softens. Add shiitake mushrooms; stir-fry for about 2 minutes or until tender. Add gai lan, oyster mushrooms and sauce; stir-fry for about 2 minutes or until vegetables are tender.
3.Remove from heat; toss in enoki mushrooms and noodles.

Fried noodles, also known as crispy noodles, are used in sang choy bow and chow mein. They can be found in supermarkets, usually in 50g or 100g packets, already deep-fried.
