Minted fruit salad and yoghurt

Fresh fruit is a lunchbox staple. This simple fruit salad makes 4 servings and you can choose which fruit you use depending on the season. In hot weather, pack with an ice block to keep the food cool.

Ingredients

Minted fruit salad and yoghurt
  • 250 gram strawberries, hulled, halved
  • 1/2 rockmelon, seeded, peeled, cut into chunks (see tip)
  • 2 cup grapes
  • 1/4 cup fresh mint leaves
  • 4 small tubs natural low-fat yoghurt

Method

    Combine strawberries, rockmelon, grapes and mint leaves in a large bowl. Set aside for 10 minutes.

    Divide fruit among 4 airtight containers and drizzle with any juices. Pack into lunch boxes with tubs of yoghurt.

Notes

Adapt this salad to the season by using different fruits.
