Method

1.Combine seasoning, oil and rind in a large bowl, add pork; toss to coat.
2.Boil, steam or microwave corn until just tender.
3.Cook the pork in a heated frying pan, uncovered, over a medium heat for about 6 minutes or until cooked. Transfer to a plate; cover, stand 5 minutes.
4.Meanwhile, to make guacamole, place the avocados in a bowl; mash roughly with a fork. Stir in the remaining ingredients. Season to taste with salt and pepper.
5.Serve pork with guacamole and corn.
