Ingredients
800 gram beef fillet, trimmed, sliced thinly
35 gram packet taco seasoning
3 clove garlic, crushed
1/2 cup (125ml) olive oil
2 large avocados (640g), halved, cut into thin wedges
250 gram baby roma tomatoes, quartered
3 green onions, cut into 5cm lengths, shredded
20 fresh baby coriander sprigs
8 20cm flour tortillas, grilled
Lime and chilli mayonnaise
1 cup (300g) whole-egg mayonnaise
1 1/2 tablespoon finely grated lemon rind
2 tablespoon lime juice
2 tablespoon finely chopped fresh coriander
2 tablespoon finely chopped fresh mint
1 1/2 tablespoon chilli paste
Method
1. Combine beef, seasoning, garlic and half the oil in a large bowl. Cover; refrigerate 3 hours or overnight.
2. Make lime and chilli mayonnaise by combining ingredients in a small bowl; season to taste.
3. Heat remaining oil in a large frying pan over high heat. Cook, beef, in batches, for 6 minutes or until cooked through. Drain on paper towel.
4. Divide mayonnaise mixture, beef, avocado, tomato, onion and coriander sprigs among tortillas. Serve with lemon cheeks, if you like.
