Mexican beef tortillas

These fresh, zingy Mexican beef tortillas are loaded full of delicious, authentic flavour and pack a good amount of punch. These are sure to become a family favourite in no time!

Mexican beef tortillas
  • 800 gram beef fillet, trimmed, sliced thinly
  • 35 gram packet taco seasoning
  • 3 clove garlic, crushed
  • 1/2 cup (125ml) olive oil
  • 2 large avocados (640g), halved, cut into thin wedges
  • 250 gram baby roma tomatoes, quartered
  • 3 green onions, cut into 5cm lengths, shredded
  • 20 fresh baby coriander sprigs
  • 8 20cm flour tortillas, grilled
Lime and chilli mayonnaise
  • 1 cup (300g) whole-egg mayonnaise
  • 1 1/2 tablespoon finely grated lemon rind
  • 2 tablespoon lime juice
  • 2 tablespoon finely chopped fresh coriander
  • 2 tablespoon finely chopped fresh mint
  • 1 1/2 tablespoon chilli paste

    Combine beef, seasoning, garlic and half the oil in a large bowl. Cover; refrigerate 3 hours or overnight.

    Make lime and chilli mayonnaise by combining ingredients in a small bowl; season to taste.

    Heat remaining oil in a large frying pan over high heat. Cook, beef, in batches, for 6 minutes or until cooked through. Drain on paper towel.

    Divide mayonnaise mixture, beef, avocado, tomato, onion and coriander sprigs among tortillas. Serve with lemon cheeks, if you like.
