1.Preheat oven to moderate, 180°C. Heat a large frying pan on high. Cook sausages for 4-5 minutes or until golden all over. Transfer to a 20 x 30cm shallow baking pan.
2.Sauté onion and garlic in same pan on high for 2-3 minutes. Add tomatoes, passata, zucchini and sugar. Season to taste. Bring mixture to the boil, then pour over sausages.
3.Cover pan with foil and bake for 15 minutes. Top with olives and basil. Serve with mashed potato.
This dish is also delicious topped with a mixture of ¼ cup grated parmesan, 2 tablespoons dry breadcrumbs and 2 tablespoons shredded basil leaves before baking.
