Meatloaves with thai flavours
  • 600 gram pork mince
  • 1/3 cup (80ml) oyster sauce
  • 2 clove garlic, crushed
  • 1 egg
  • 1 fresh small red thai chilli, chopped finely
  • 1/2 cup (50g) packaged breadcrumbs
  • 1/2 cup (125ml) coconut milk
  • 1/3 cup finely chopped thai basil

Method

    Preheat oven to 240°C (220°C fan-forced).

    Combine mince, 2 tablespoons of the sauce, garlic, egg, chilli, breadcrumbs, coconut milk and basil in large bowl, shape into four rectangular meatloaves. Wrap each meatloaf in oiled foil, place in large shallow baking dish. Cook meatloaves 10 minutes.

    Remove foil, brush meatloaves with another tablespoon of the sauce. Cook about 10 minutes, turning occasionally, or until cooked through.
