- 2 egg yolks
- 1/2 teaspoon salt
- 1 teaspoon dijon mustard
- 1/2 cup extra-light olive oil
- 1/2 cup olive oil
- 1 tablespoon lemon juice
Method

- 1Whisk, process or blend egg yolks with salt and mustard until smooth.
- 2While whisking, or with motor operating, add oils in a thin, steady stream until dressing thickens. Add juice and a little hot water for a thinner consistency, if desired.
