Mashed potato casserole

A crispy and delicious mashed potato casserole is the perfect accompaniment to roast dinners.

Mashed potato casserole
  • 500 gram sebago potatoes, peeled, chopped coarsely
  • 30 gram butter, softened
  • 2 eggs, beaten lightly
  • 300 millilitre cream
  • 1 cup (120g) coarsely grated cheddar cheese
  • 2 tablespoon coarsely chopped fresh chives


Mashed potato casserole

    Boil, steam or microwave potato until tender; drain. Mash potato in large bowl with butter until smooth; spread over base of lightly oiled shallow 1.5-litre (6-cup) baking dish.

    Preheat oven to moderate.

    Combine remaining ingredients in medium bowl; pour over potato. Bake, uncovered, in moderate oven about 40 minutes or until top sets and is browned.


You can also use coliban or nicola potatoes for this recipe.
