Pressed margarita pizzas

This fresh and easy lunch idea is a cross between a margherita pizza and a quesadilla. Creamy bocconcini, fresh tomato and basil sandwiched between toasted tortillas.

  • 1 tablespoon tomato paste
  • 1 x 20cm floured tortilla (40g)
  • 50 grams cherry tomatoes, sliced thinly
  • 6 fresh basil leaves
  • 6 baby bocconcini (30g), sliced thinly

    Preheat a sandwich press.
  • 2
    Spread tomato paste over half of the tortilla, leaving a 1cm border. Top with tomato, basil and bocconcini. Season.

    Fold over to enclose filling. Lightly wrap tortilla in baking paper; place in sandwich press. Cook for 3 minutes or until golden and cheese has melted. Cut into wedges to serve.
