This fresh and easy lunch idea is a cross between a margherita pizza and a quesadilla. Creamy bocconcini, fresh tomato and basil sandwiched between toasted tortillas.
2.Spread tomato paste over half of the tortilla, leaving a 1cm border. Top with tomato, basil and bocconcini. Season.
3.Fold over to enclose filling. Lightly wrap tortilla in baking paper; place in sandwich press. Cook for 3 minutes or until golden and cheese has melted. Cut into wedges to serve.
