Maple-glazed sweet potato and red onions

Drape sweet potatoes with the extra sweetness and rich flavour of maple syrup in this easy to prepare vegetable dish. A worthy accompaniment to any family main meal.

Ingredients

Maple-glazed sweet potato and red onions
  • 4 medium (1.6kg) white sweet potatoes
  • 2 tablespoon lemon juice
  • 4 medium (680g) red onions, peeled and quartered
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon maple syrup
  • sea salt flakes

Method

    Preheat oven to moderate (180°C / 160°C fan-forced).

    Peel sweet potatoes; place in bowl of cold water with the lemon juice to prevent browning. Cut potatoes into thick slices, return to the water.

    Line a shallow oven tray with baking paper. Drain potato, pat dry with absorbent paper. Place potato and onion on tray. Drizzle vegetables with olive oil; drizzle sweet potato only with maple syrup. Sprinkle with sea salt, bake for about 40 minutes or until tender and browned.

Notes

This recipe can be made up to six hours ahead; reheat just before serving.
