Mango and white chocolate rocky road creams
  • 2 medium (860g) mangoes, chopped coarsely
  • 1 cup (280g) greek yoghurt
  • 1/2 cup (125ml) thickened cream
  • 2 teaspoon caster sugar
  • 250 gram packet white chocolate rocky road, chopped

Method

    Blend or process half of the mango until smooth. Transfer to a bowl, fold in the yoghurt.

    Beat cream and sugar in a small bowl with an electric mixer until firm peaks form; fold into mango mixture.

    Divide half the chopped mango among four serving glasses. Top with half the cream mixture, then rocky road, remaining cream mixture and mango.
