Lychee, mint and passionfruit champagne cocktail
  • 560 gram can lychees
  • 750 millilitre chilled sparkling white wine or champagne
  • 2 passionfruit, pulp
  • 1/3 cup mint leaves

Method

    Drain lychees from can, retaining ¼ cup syrup. Place in a large jug with sparkling white wine or champagne, passionfruit pulp and mint leaves. Stir and serve.
