Lychee cocktails
  • 230 gram (7-ounce) can of lychees
  • 2 centimetre (¾-inch) piece fresh ginger
  • 6 strawberries
  • 2 cup ice-cubes
  • 2 tablespoon lime juice
  • 1 1/3 cup chilled vodka

    Drain lychees in syrup into a medium saucepan. Push one lychee each onto eight short skewers and freeze. Roughly chop remaining lychees, then refrigerate. Thinly slice ginger. Halve strawberries. Add ginger to syrup in pan; bring to the boil over medium heat. Simmer 3 minutes, then add strawberries. Cool to room temperature then add chopped lychees. Chill until required (overnight is fine).

    To serve, place a lychee skewer in each cocktail glass. Strain syrup into a large container with a lid; ice-cubes and lime juice. Screw on lid; shake vigorously for 1 minute. Strain liquid into a jug; pour into glasses. Pour vodka equally among glasses. Serve cocktail immediately.
