Lemon balm syrup with pineapple and passionfruit

With just five ingredients and taking only 15 minutes to make this tangy, fruity delight is a tasty and rather healthy treat.

Ingredients

Lemon balm syrup with pineapple and passionfruit
  • 1/2 cup coarsely chopped lemon balm leaves
  • 1/2 cup (110g) caster sugar
  • 1 cup (250ml) water
  • 1 medium (1.25kg) pineapple, peeled, chopped
  • 4 passionfruit, pulp removed
  • vanilla ice-cream, to serve

Method

    Combine lemon balm leaves, sugar and the water in a small saucepan; stir over low heat until sugar is dissolved. Bring to the boil; reduce heat, simmer, uncovered, for 5 minutes.

    Remove from the heat; cool. Strain syrup into a jug; refrigerate until cold.

    Divide the pineapple between four serving bowls and spoon over the passionfruit pulp. Drizzle with the syrup; serve with ice-cream.

Notes

Not suitable to freeze. For a refreshing drink, add the syrup to sparkling mineral water.
