Lemon & lime rice salad

Super simple and seriously zesty, this lemon and lime rice salad makes an excellent side dish for lunch or dinner.

Ingredients

Lemon & lime rice salad
  • 2 cup (400g) basmati rice
  • 1/2 cup (80g) almond kernels, chopped coarsely
  • 1/4 cup (50g) pepitas
  • 1/4 cup (35g) sunflower seed kernels
  • 1/2 cup thinly sliced fresh coriander
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (60ml) lemon juice
  • 1 teaspoon finely grated lime rind
  • 2 tablespoon lime juice
  • 1/4 teaspoon cracked black pepper

Method

Lemon & lime rice salad

    Cook rice in large saucepan of boiling water, uncovered, until tender; drain. Rinse under cold water; drain.

    Meanwhile, place olive oil, lemon juice, lime rind, lime juice and pepper in screw-top jar; shake well.

    Place rice in large bowl with remaining ingredients and dressing; stir gently to combine.
