Leftover pork ribs fried rice
Make the most of dinner by making enough for lunch the next day! Here, we're using up those leftover pork ribs to make an easy barbecue pork fried rice that's just waiting to be gobbled up for lunch.

Leftover pork ribs fried rice
- 350 gram leftover pork ribs
- 2 teaspoon vegetable oil
- 4 eggs, whisked
- 1 red capsicum, seeded, finely chopped
- 3 cup cooked jasmine rice
- 1/2 cup frozen peas
- 4 green onions, chopped
Method
Leftover pork ribs fried rice
- 1Shred meat form ribs and set aside.
- 2In a wok or large frying pan, heat oil on high. Add egg, swirling to coat wok. Cook like an omelette for 1-2 minutes until set. Remove and roll up. Set aside.
- 3Add pork meat and capsicum to wok. Stir-fry for 2 minutes. Mix in rice, peas and onion. Stir-fry for 1-2 minutes to heat through. Serve hot or cold topped with sliced egg, a drizzle of hoisin and accompanied with snow pea sprouts.
Notes
Add other vegies of choice or finish with some chopped peanuts.
