Leftover meatball pita breads

If you have leftover meatballs from last night's dinner, or from this lamb kofta curry recipe, this is a great way to transform them into a filling, healthy lunch for work.

Ingredients

Leftover meatball pita breads
  • 4 wholemeal pita bread pockets, halved
  • 2/3 cup hummus
  • 50 gram baby spinach leaves, leaves torn
  • 2 lebanese cucumbers, peeled into ribbons
  • 12 leftover pre-cooked meatballs
  • 2 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1/3 cup greek-style yoghurt

Method

    Spread each half of pita bread pockets with hummus. Fill with spinach, cucumber and reserved meatballs.

    Drizzle over combined oil and lemon juice. Season. Serve with yoghurt.

Notes

Package dressing and yoghurt separately and drizzle when ready to serve.
