Lamb and tomato stir-fry

Toss this quick lamb and tomato stir-fry together for a midweek meal to satisfy.

Ingredients

Lamb and tomato stir-fry
  • 2 tablespoon vegetable oil
  • 350 gram lamb leg steaks, sliced
  • 1 red onion, wedges
  • 2 clove garlic, crushed
  • 1 tablespoon grated fresh ginger
  • 1 red capsicum, seeded, sliced
  • 1 bunch broccolini, sliced
  • 4 tomatoes, chunks
  • steamed rice, to serve
Sauce
  • 1/4 cup soy sauce
  • 1/4 cup white vinegar
  • 2 tablespoon fish sauce
  • 2 tablespoon brown sugar
  • 2 teaspoon cornflour

Method

    In a wok, heat half oil on high.

    Stir-fry lamb, in 2 batches, for 2-3 minutes each until browned. Remove from wok.

    In same cleaned wok, heat remaining oil on high. Stir-fry onion, garlic and ginger for 1 minutes. Add capsicum and broccolini and stir-fry for 1-2 minutes. Mix in tomato and stir-fry for 1-2 minutes more.

    Meanwhile to make the sauce; stir all ingredients together.

    Return lamb to wok with sauce. Heat until sauce boils. Serve with rice.
