Kangaroo burger with the lot
  • 500 gram frozen oven-bake chips
  • 500 gram kangaroo mince
  • 1 onion, grated, plus 2 onions, sliced
  • 1/4 cup (15g) fresh breadcrumbs
  • 1 tablespoon olive oil
  • 4 hamburger buns, split, lightly toasted
  • 4 iceberg lettuce leaves
  • 8 large slices canned beetroot
  • 2 tomatoes, sliced
  • 2 tablespoon tomato chutney or relish

    Place chips on a large baking tray in a single layer. Bake according to packet directions. Combine kangaroo mince, grated onion and breadcrumbs. Season. Shape into four patties.

    Heat oil in a large frying pan on medium-high Cook hamburger patties for 4 minutes each side, until browned and cooked through. Transfer to a plate and cover with foil to keep warm. Cook sliced onion in same pan for 3-4 minutes, stirring occasionally, until lightly browned.

    Top bases of hamburger buns with lettuce, beetroot and tomato. Top with patties, fried onion, tomato chutney and bun lids. Season chips and serve alongside burgers.
