Kale and avocado soup

Cool, refreshing and flavoursome, this creamy kale and avocado soup is packed full of nutrients and healthy fats that will keep you fueled for a busy day. This recipe is from Scott Gooding's book, Clean Living.

Ingredients

Kale and avocado soup
  • 8 kale leaves, washed
  • 1 celery stick
  • 2 shallots, diced finely
  • 1 clove garlic, diced
  • 2 limes, juice and zest
  • 1 centimetre peeled and chopped cucumber
  • 1 avocado
  • 2 tablespoon avocado oil
  • 1 teaspoon sea salt
  • 1/4 cup flat-leaf parsley

Method

Kale and avocado soup

    Start by juicing the kale and celery. This should yield about ½ cup of green juice.

    Combine juice in a food processor with the diced shallots, garlic, lime juice, cucumber, avocado, avocado oil and salt; blend until smooth.

    Refrigerate mixture for 15 minutes and serve topped with parsley, lime zest and ground black pepper.
