Italian roasted pork

Slice this delicious Italian-style roast pork thickly and serve with creamy mashed potato and salad for a delicious special occasion family meal.

Ingredients

Italian roasted pork
  • 2 tablespoon olive oil
  • 1.5 kilogram pork shoulder, rolled and tied
  • 2 clove garlic, crushed
  • 1 medium brown onion, coarsely chopped
  • 2 large fennel bulbs, halved, thickly sliced
  • 8 slice hot pancetta, coarsely chopped
  • 1 tablespoon tomato paste
  • 1/2 cup (125 millilitres) dry white wine
  • 400 gram can whole tomatoes
  • 1 cup (250 millilitres) chicken stock
  • 1 cup (250 millilitres) water
  • 2 sprigs fresh rosemary
Spice rub
  • 1 teaspoon fennel seeds
  • 2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon cracked black pepper
  • 1 tablespoon sea salt
  • 2 teaspoon olive oil

    In large frying pan, heat oil; cook pork, uncovered, until browned all over.

    Meanwhile, in a small bowl, combine ingredients for spice rub.

    Remove pork from dish; remove all but 1 tbsp of the oil in dish. Cook garlic, onion, fennel and pancetta in same dish, stirring, until onion softens. Add paste, wine, undrained tomatoes, stock, the water and rosemary; bring to the boil.

    Meanwhile, rub pork with spice rub.

    Place pork in 4.5-litre (18-cup) slow cooker with; pour fennel mixture over pork. Cook, covered, on low, 8 hours. Serve pork sliced with vegetable mixture and drizzled with sauce.
