Ingredients

Italian risoni soup
  • 30 gram butter
  • 1 leek, trimmed, washed, chopped
  • 175 gram woolworths select shortcut rindless bacon, chopped
  • 3 sprigs of thyme, plus extra to serve
  • 1 rosemary stalk
  • 1 carrot, finely chopped
  • 1 clove garlic, crushed
  • 1 tablespoon woolworths select tomato paste
  • 4 cup chicken stock
  • 3 cup water
  • 1 cup risoni or other small pasta
  • grated parmesan and crusty bread to serve

Method

    Melt butter in a large saucepan on medium. Sauté leek, bacon, thyme and rosemary for 4-5 minutes.

    Add carrots and garlic. Saute for 2-3 minutes until golden. Stir in tomato paste and cook for 1 minute.

    Add stock, water and risoni. Bring to boil. Reduce heat to low and simmer, for 10-15 minutes until pasta is al dente.

    Remove herbs sprigs. Serve soup topped with parmesan and extra thyme. Accompany with crusty bread.
