Italian risoni soup
- 30 gram butter
- 1 leek, trimmed, washed, chopped
- 175 gram woolworths select shortcut rindless bacon, chopped
- 3 sprigs of thyme, plus extra to serve
- 1 rosemary stalk
- 1 carrot, finely chopped
- 1 clove garlic, crushed
- 1 tablespoon woolworths select tomato paste
- 4 cup chicken stock
- 3 cup water
- 1 cup risoni or other small pasta
- grated parmesan and crusty bread to serve
Method
Italian risoni soup
- 1Melt butter in a large saucepan on medium. Sauté leek, bacon, thyme and rosemary for 4-5 minutes.
- 2Add carrots and garlic. Saute for 2-3 minutes until golden. Stir in tomato paste and cook for 1 minute.
- 3Add stock, water and risoni. Bring to boil. Reduce heat to low and simmer, for 10-15 minutes until pasta is al dente.
- 4Remove herbs sprigs. Serve soup topped with parmesan and extra thyme. Accompany with crusty bread.
