This humble chicken and brown rice salad offers a taste of Italy, with the hero its lemon mustard dressing.

Ingredients

1 cup (200g) medium-grain brown rice, rinsed

1 cup (160g) chopped cooked chicken

2 green onions (green shallots), sliced thinly

1/4 cup (40g) small black olives

Lemon mustard dressing

2 tablespoon lemon juice

1 tablespoon dijon mustard

1/2 clove garlic, crushed

2 tablespoon extra virgin olive oil

salt and freshly ground pepper

Method

1.Cook the rice following the packet directions.

2.To make lemon mustard dressing: combine all ingredients in a screw-top jar; shake well.

3.Add remaining ingredients to warm rice. Stir through lemon mustard dressing.

4.Serve warm or chilled.
