Italian brown rice salad

This humble chicken and brown rice salad offers a taste of Italy, with the hero its lemon mustard dressing.

Ingredients

Italian brown rice salad
  • 1 cup (200g) medium-grain brown rice, rinsed
  • 1 cup (160g) chopped cooked chicken
  • 2 green onions (green shallots), sliced thinly
  • 1/4 cup (40g) small black olives
  • 2 tablespoon slivered almonds, toasted
  • 2 tablespoon fresh parsley or basil, chopped
Lemon mustard dressing
  • 2 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1/2 clove garlic, crushed
  • 2 tablespoon extra virgin olive oil
  • salt and freshly ground pepper

Method

Italian brown rice salad

    Cook the rice following the packet directions.

    To make lemon mustard dressing: combine all ingredients in a screw-top jar; shake well.

    Add remaining ingredients to warm rice. Stir through lemon mustard dressing.

    Serve warm or chilled.
