Italian brown rice salad
- 1 cup (200g) medium-grain brown rice, rinsed
- 1 cup (160g) chopped cooked chicken
- 2 green onions (green shallots), sliced thinly
- 1/4 cup (40g) small black olives
- 2 tablespoon slivered almonds, toasted
- 2 tablespoon fresh parsley or basil, chopped
Lemon mustard dressing
- 2 tablespoon lemon juice
- 1 tablespoon dijon mustard
- 1/2 clove garlic, crushed
- 2 tablespoon extra virgin olive oil
- salt and freshly ground pepper
Method
Italian brown rice salad
- 1Cook the rice following the packet directions.
- 2To make lemon mustard dressing: combine all ingredients in a screw-top jar; shake well.
- 3Add remaining ingredients to warm rice. Stir through lemon mustard dressing.
- 4Serve warm or chilled.
