Individual tortilla beef pies

Filled with savoury spiced beef and high-fibre beans, these cheesy, sour cream-topped tortilla beef pies are a delicious Mexican treat, just perfect for fuss-free family dinners.

Individual tortilla beef pies
  • 4 large burrito tortillas
  • 1 tablespoon extra virgin olive oil
  • 1 brown onion, finely chopped
  • 400 gram beef mince
  • 1 x 35g sachet chilli spice mix
  • 3/4 cup water
  • 420 gram canned four-bean mix, drained, rinsed
  • 1 egg, lightly whisked
  • 1/2 cup grated tasty cheese
  • salsa, sour cream, coriander leaves to serve

    Preheat oven to 180°C. Lightly grease 4 x 13cm base (18cm top) shallow pie dishes.

    Lightly spray tortillas with oil and press into pans. Bake for 10 minutes until golden and crisp.

    In a frying pan heat oil on high. Saute onion for 2-3 minutes until tender. Add mince and brown well for 5 minutes, breaking up with a spoon as it cooks.

    Stir in chilli mix and water. Simmer for 5 minutes, stirring occasionally until cooked through. Stir in beans. Remove from heat. Allow to cool, stir through egg.

    Spoon mixture into prepared cases, smoothing top. Sprinkle over cheese. Bake for 15-20 minutes until mince is heated through and cheese has melted. Serve with salsa, grated parmesan, coriander leaves and sour cream.


If liked, serve the pie with a salsa of combined corn kernels, chopped cucumber, chopped avocado, chopped tomato, chopped coriander and a little chopped chilli. If making the larger pie, allow to rest for 5 minutes before slicing.
