Ice-cream waffle sandwiches

All you'll need for these tasty frozen treats are store-bought ice-cream and waffles. Easy!

Ice-cream waffle sandwiches
  • 2 litre neapolitan ice-cream, softened slightly
  • 8 rectangular waffles
  • icing sugar, sliced strawberries, to serve

    Line a 21 x 10cm loaf pan with baking paper, extending paper at long sides for handles. Turn ice-cream onto a chopping board. Carefully slice into 3 equal portions to separate flavours, place each flavour in a separate bowl (see tip).

    Spread strawberry ice-cream into prepared pan. Freeze 20 mins until firm. Spread vanilla ice-cream over strawberry layer, freeze 20 mins until firm. Spread chocolate over vanilla layer, freeze 1 hour or until firm.

    Use baking paper handles to remove ice-cream from pan. Cut into 4 rectangles the same size as waffles. Sandwich each ice-cream rectangle between two waffles. Freeze 1 hour until firm. Serve dusted with icing sugar and chopped strawberries, if liked.


Keep remaining ice-cream in freezer between layers.
