Hotcakes with caramelised apples

Whether you have them for breakfast or dessert, these hotcakes will satiate your appetite with an indulgent topping of caramelised apples and thick, whipped cream.

Method

1.In a medium jug or bowl, whisk eggs, buttermilk and butter, until combined. Sift flour, sugar and salt into a large bowl. Gradually whisk in the milk mixture, until smooth.
2.Heat a non-stick frying pan over a medium heat until hot. Grease the pan with a little butter or cooking oil spray; pour 1/4 cups of the batter into the pan, allowing room for spreading. Cook about 2 minutes, or until bubbles appear. Turn hotcakes; cook until lightly browned underneath. Remove from the pan; set aside. Cover with clean tea towel. Repeat with remaining batter.
3.To make apples: peel, core and cut apples into thin wedges. Melt butter in a large frying pan over medium heat. Add sugar; cook, stirring, until combined. Add apple and cinnamon. Cover loosely. Cook, stirring occasionally, about 10 minutes or until apple is just softened and coated in caramelized mixture. Stir in almonds.
4.Serve hotcakes stacked on a plate. Top with caramelised apples and thick cream, if desired.
