Baking the kumara and honey soy pork in the same dish helps ensure that the pork fillets stay juicy, and allows all the flavours of the dish to intermingle and intensify.
1.Cut each pork fillet in half. Place the pork and kumara in an oiled baking dish. Pour over the combined mustard, honey and soy sauce, toss to coat pork and kumara in the honey mixture.
2.Bake the pork and kumara, uncovered, in a very hot oven, 250°C, for about 25 minutes or until they are cooked through. Slice the pork and serve with the kumara, topped with the green onions.
For a more intense flavour, marinate the pork in half of the mustard mixture overnight. Not suitable to freeze. Not suitable to microwave.
