  • 1/3 cup (80ml) soy sauce
  • 1/4 cup (90g) honey
  • 8 chicken drumsticks (1.2kg)
  • 2 teaspoon vegetable oil
  • 2 eggs, beaten lightly
  • 4 rindless bacon rashers (260g), chopped coarsely
  • 1 medium brown onion (150g), chopped finely
  • 1 stalk celery (150g), trimmed, chopped finely
  • 3 cup (600g) cooked white long-grain rice
  • 1/2 cup (80g) frozen corn kernels, thawed
  • 1/2 cup (60g) frozen peas, thawed
  • 2 tablespoon soy sauce, extra
  • 2 green onions, chopped finely

Method

    Combine soy and honey in large bowl with chicken. Cover; refrigerate 3 hours or overnight.

    Preheat oven to 180°C (160°C fan-forced).

    Place undrained chicken, in single layer, in large shallow baking dish; cook, uncovered, in oven about 40 minutes or until cooked through, turning occasionally.

    Meanwhile, heat ½ teaspoon of the oil in wok; cook half of the egg mixture over medium heat, swirling wok to make a thin omelette. Transfer to board; when cool enough to handle, roll into cigar shape, slice thinly. Repeat with another ½ teaspoon of the oil and remaining egg.

    Heat remaining oil in same wok; stir-fry bacon, brown onion and celery until onion softens. Add rice, corn, peas and extra soy; stir-fry until heated through.

    Sprinkle green onion over fried rice before serving with chicken.

Notes

You need to cook 1½ cups (300g) white long-grain rice the day before for this recipe. Remove skin from chicken and cut the meat off the bone for your toddler. Honey may contain harmful bacteria and is not recommended for children under one year old.
