Healthy turkey bolognese
  • 2 teaspoon olive oil
  • 1 chopped onion
  • 1 clove garlic, crushed
  • 500 gram turkey mince
  • 200 gram mushrooms, chopped
  • 1 carrot, peeled, finely chopped
  • 1 zucchini, finely chopped
  • 2 tablespoon tomato paste
  • 400 gram can diced tomatoes
  • 1 cup reduced-salt beef stock (or water)
  • 500 gram wholemeal or spelt penne pasta
  • shaved parmesan, salad, to serve

    In a large frying pan, heat oil on high. Saute onion and garlic for 3-4 minutes until onion is tender.

    Increase heat to high. Brown mince for 5-6 minutes, breaking up lumps. Add vegetables and cook, stirring, for a further 2-3 minutes. Stir in paste and cook for 1 minute.

    Mix in combined tomatoes and stock. Bring to boil. Reduce heat to medium. Simmer for 15-20 minutes. Season to taste.

    Meanwhile, in a large saucepan of boiling water, cook pasta until al dente. Drain. Return to pan.

    Toss hot sauce through pasta in pan. Serve topped with shaved parmesan if liked. Accompany with salad.


Turkey mince is learner than regular beef or pork mince. To hide added vegetables from the kids, grate vegies rather than chopping them. Add chopped basil for green goodness and flavour.
