Healthy sausage rolls

The tasty morsels are a great way to sneak in some extra vegies without the kids noticing.

Healthy sausage rolls
  • 500 gram lean chicken or turkey mince
  • 1 cup fresh wholemeal breadcrumbs
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1/4 cup bought tomato chutney
  • 2 green onions, chopped
  • 1 egg, lightly beaten
  • 1/4 cup chopped parsley
  • 4 reduced-fat puff pastry sheets, halved
  • milk, for brushing
  • sesame and poppy seeds, to sprinkle
  • tomato sauce, to serve

    Preheat oven to 200°C (180°C fan-forced). Line two oven trays with baking paper.

    In a bowl, combine mince, breadcrumbs, zucchini, carrot, chutney, onions, egg and parsley. Season to taste. Mix well.

    Spoon 1/8 of mince mixture lengthways along centre of one pastry strip. Roll up to enclose filling; press seam-side down, to seal. Repeat with remaining pastry and filling.

    Cut each roll into four equal pieces. Make small slits on top of each roll. Brush with milk; sprinkle with combined seeds. Bake 25-30 minutes, until pastry is well puffed and golden. Serve with sauce.
