Healthy sausage rolls
- 500 gram lean chicken or turkey mince
- 1 cup fresh wholemeal breadcrumbs
- 1 zucchini, grated
- 1 carrot, grated
- 1/4 cup bought tomato chutney
- 2 green onions, chopped
- 1 egg, lightly beaten
- 1/4 cup chopped parsley
- 4 reduced-fat puff pastry sheets, halved
- milk, for brushing
- sesame and poppy seeds, to sprinkle
- tomato sauce, to serve
Method
Healthy sausage rolls
- 1Preheat oven to 200°C (180°C fan-forced). Line two oven trays with baking paper.
- 2In a bowl, combine mince, breadcrumbs, zucchini, carrot, chutney, onions, egg and parsley. Season to taste. Mix well.
- 3Spoon 1/8 of mince mixture lengthways along centre of one pastry strip. Roll up to enclose filling; press seam-side down, to seal. Repeat with remaining pastry and filling.
- 4Cut each roll into four equal pieces. Make small slits on top of each roll. Brush with milk; sprinkle with combined seeds. Bake 25-30 minutes, until pastry is well puffed and golden. Serve with sauce.
