Ingredients
1 1/2 cup icing sugar, sifted
1 cup hazelnut meal
1/2 cup plain flour, sifted
185 gram butter, melted
1 teaspoon vanilla extract
1 green apple, peeled, cored, chopped
6 egg whites
1/3 cup roasted hazelnuts, skin removed, chopped
icing sugar, for dusting
Method
1. Preheat oven to 180°C (160°C fan-forced). Lightly grease a 12-hole friand pan.
2. In a bowl, combine icing sugar, hazelnut meal and flour. Mix in butter and vanilla, stirring gently until just combined. Fold apple through.
3. In a clean bowl, lightly whisk egg-whites until frothy. Fold through hazelnut mixture.
4. Divide mixture evenly between friand recesses. Sprinkle with hazelnuts. Bake 20-25 minutes, or until cooked when tested.
5. Cool 5 minutes in pan, then turn onto a wire rack to cool completely. Dust with icing sugar, to serve.
