Hazelnut and apple friands
- 1 1/2 cup icing sugar, sifted
- 1 cup hazelnut meal
- 1/2 cup plain flour, sifted
- 185 gram butter, melted
- 1 teaspoon vanilla extract
- 1 green apple, peeled, cored, chopped
- 6 egg whites
- 1/3 cup roasted hazelnuts, skin removed, chopped
- icing sugar, for dusting
Method
Hazelnut and apple friands
- 1Preheat oven to 180°C (160°C fan-forced). Lightly grease a 12-hole friand pan.
- 2In a bowl, combine icing sugar, hazelnut meal and flour. Mix in butter and vanilla, stirring gently until just combined. Fold apple through.
- 3In a clean bowl, lightly whisk egg-whites until frothy. Fold through hazelnut mixture.
- 4Divide mixture evenly between friand recesses. Sprinkle with hazelnuts. Bake 20-25 minutes, or until cooked when tested.
- 5Cool 5 minutes in pan, then turn onto a wire rack to cool completely. Dust with icing sugar, to serve.
