Haloumi and vegetable skewers

Method

1.Soak skewers in water for 10 minutes to prevent them burning, or use metal skewers.
2.Cut haloumi and vegetables into even bite-size pieces and thread onto skewers.
3.Combine the oil, lemon rind, herbs, garlic and seasoning in a jar and brush half over the skewers.
4.Cook skewers in a grill, frying pan or BBQ over a medium heat for 3-4 minutes each side, basting with the flavoured oil until vegetables are just tender and coloured.
5.Serve drizzled with any remaining oil.
