Method

1.Spread 4 slices of bread with mustard; top with ham and cheese, then remaining bread.
2.In a medium shallow bowl, whisk eggs, egg yolks and milk until combined.
3.Dip sandwiches, one at a time, into egg mixture and turn to coat; drain off excess.
4.In a large frying pan, heat ghee. Cook toast in batches, about 2 minutes each side, or until browned lightly.
5.Cut crusts; cut toasts into halves or quarters, and serve immediately, garnish with micro cress.

Ghee is good to cook with as it doesn’t burn as quickly as butter. If you prefer, use 30g unsalted butter and 1 tablespoon olive oil for frying. Micro cress is a cress that has been harvested at seedling stage. It is available at speciality greengrocers and markets. Micro cress is highly perishable, so must be used as soon as possible after purchase. To trim, just snip off as many leaves as you want using kitchen scissors. If you can’t find it , substitute with watercress.
