Method

1.Place green onion, wine and white pepper in a small saucepan. Simmer 10-12 minutes, until liquid has reduced to about 1 tablespoon. Strain; discard solids.
2.Return liquid to a clean, small saucepan on medium heat. Whisk in unsalted butter, 1 piece at a time, until all butter is incorporated and sauce is creamy and slightly thickened.
3.Remove from heat; whisk in lemon juice. Season to taste.
4.Preheat char-grill or barbecue plate to hot.
5.Brush whiting with melted butter. Grill 3-5 minutes each side, until cooked through.
6.Serve whiting drizzled with sauce; accompany with steamed vegetables.
