Method

1.Preheat grill.
2.Place plums, cut-side up, on a shallow-sided oven tray; pour measured water into tray. Sprinkle the plums with sugar, then grill until browned lightly. Cool.
3.Meanwhile, combine the cream, icing sugar, rind and juice in a medium bowl.
4.To assemble, layer the crushed meringue, orange cream, plums and plum syrup on a serving platter or in individual glasses.

Adding water to the oven tray before grilling the plums acts as a base for the plum syrup – the colour from the plum skin combined with the excess sugar makes a syrup that can be drizzled over the plums.
