Grilled marshmallow with honeydew melon and clover syrup

Method

Grilled marshmallow with honeydew melon

1.Line a deep loaf or baking tin with cling film and spray with cooking spray.
2.Dissolve gelatine in ¼ cup warm water. Combine sugar, glucose, salt, vanilla and another ¼ cup warm water in a saucepan. Bring to the boil, then reduce heat and cook for 1 minute. Add the dissolved gelatine and mix.
3.Transfer the hot mixture to the bowl of a mixer and beat on high speed (using whisk attachment) for 12 minutes until thick and cool. Pour into prepared tin, smooth and refrigerate until set.
4.Using a hot, wet knife, cut the marshmallow into 3x3cm cubes. Dip the knife into hot water in between each cut. Thread 2-3 pieces of marshmallow onto each skewer. Grill until golden.
5.To serve, arrange the marshmallow skewers and honeydew melon wedges on a serving plate. Drizzle with clover syrup and garnish with mint leaves.

6.Place honey, vanilla and lime juice in a small saucepan and bring to the boil. Simmer for 2 minutes, then remove from heat.

These marshmallows are a fun and simple treat to make with kids. I add limes to cut through the sugar of the marshmallow, but you could use kiwifruit instead. Pawpaw or watermelon will also work in place of the honeydew melon. To put your own spin on this treat, buy freeze-dried fruit powder from the supermarket. Add this to the gelatine mixture so you and the kids can play around with different flavour combinations.
