Ingredients
Corn salsa
- 2 cup (330g) fresh corn kernels
- 200 gram (6½ ounces) green beans, chopped coarsely
- 4 green onions (scallions), sliced thinly
- 1/4 cup coarsely chopped fresh mint
- 1/4 cup coarsely chopped fresh coriander (cilantro)
- 1 fresh long green chilli, chopped finely
- 2 tablespoon lime juice
Grilled fish with corn salsa
- 1 teaspoon sweet paprika
- 1 teaspoon ground cumin
- 4 x 100g (3-ounce) firm white fish fillets
- cooking-oil spray
Method
Grilled fish with corn salsa
- 1To make corn salsa; boil, steam or microwave corn and beans until tender; drain. Rinse under cold water; drain. Combine corn and beans in a medium bowl with remaining ingredients.
- 2Combine spices in a small shallow bowl, add fish; turn to coat fish in spice mixture.
- 3Spray heated grill plate (or grill or barbecue) with oil; cook fish for 5 minutes each side or until cooked.
- 4Serve fish with corn salsa.
Notes
Use well-drained canned corn kernels or thawed frozen corn instead of fresh corn, if you like.
