Grilled chilli chicken with tomato salsa

Ingredients

Grilled chilli chicken with tomato salsa
  • 2 tablespoon vegetable or olive oil, plus extra, to serve
  • 1 fresh long green chilli, thinly sliced
  • 1/3 cup finely chopped coriander
  • 1 tablespoon finely grated lemon zest
  • 1 2cm piece fresh ginger, peeled, finely chopped
  • 2 clove garlic, finely chopped
  • 4 single chicken breast fillets, scored
  • 3 large tomatoes, finely chopped
  • 1 red onion, halved, finely chopped

Method

    In a glass bowl, combine half the oil, half the chilli, half the coriander, zest, ginger and garlic.

    Rub mixture into chicken. Place chicken on a plate. Cover with plastic wrap; chill 10 minutes to marinate.

    Meanwhile, combine tomato, onion and remaining oil, chilli and coriander in a bowl; season.

    Preheat a char-grill or barbecue grill on high. Cook chicken, in batches, 2 minutes each side, or until brown and cooked. Transfer to a plate. Cover with foil; rest for 5 minutes. Slice.

    Arrange chicken and tomato salsa on serving plates. Serve drizzled with extra oil.

Notes

If time allows, marinate chicken for up to 1 hour.
