Greek-style chicken salad
  • 1 large (750g) cos lettuce, shredded finely
  • 3 cup (480g) cooked chicken, shredded finely
  • 6 green onions (green shallots), sliced thinly
  • 1/4 cup (30g) seeded green olives, sliced thinly
  • 2 tablespoon fresh dill, chopped
  • 1/3 cup (80ml) olive oil
  • 1/4 cup (60ml) lemon juice
  • salt and freshly ground black pepper

    Combine the lettuce, chicken, onions, olives and dill in a large serving bowl.

    Combine oil, juice and salt and pepper to taste in a screw-top jar; shake well.

    Just before serving, add the dressing to the salad and toss gently to combine.


You will need a large barbecued chicken for this recipe. Not suitable to freeze or microwave.
