Greek feta salad
- 1/4 cup (60ml) olive oil
- 1 tablespoon lemon juice
- 1 tablespoon white wine vinegar
- 1 tablespoon finely chopped fresh oregano
- 1 clove garlic, crushed
- 3 medium tomatoes (450g), cut into wedges
- 2 lebanese cucumbers (260g), coarsely chopped
- 1 small red onion (100g), thinly sliced
- 1 small red capsicum (150g), thinly sliced
- 1/2 cup (75g) seeded black olives
- 200 gram feta cheese, coarsely chopped (we like south cape fetta)
