Greek coffee

A traditional briki (small pot) is the best pot to use when making Greek coffee because it allows the proper amount of froth to form, which in turn adds to the unique taste.

Method

1.Place cold water in 4 demitasse-cup capacity briki or small saucepan. Add coffee and sugar; stir over low heat until sugar dissolves. Slowly bring to the boil; remove from heat when froth almost reaches the top of briki.
2.Divide froth among 4 demitasse cups, then carefully fill the cups with remaining coffee mixture. Serve coffee immediately with a glass of cold water.

Brikis are available from Greek and Middle Eastern delicatessens. A demitasse cup holds about ¼ cup (60ml).
