Method

1.Preheat oven to 200°C. Grease a 25cm x 30cm swiss roll pan.
2.Cream butter and sifted icing sugar in a small bowl with electric mixer until light and fluffy. In two batches, stir in sifted flours. Knead pastry quickly and gently on a lightly floured surface until just smooth. Spread 2/3 of the pastry evenly over base of prepared pan. Wrap remaining pastry in plastic wrap, refrigerate 30 minutes or until firm.
3.Beat cream cheese in small bowl with electric mixer until smooth. Beat in sugar and lemon juice. Spread mixture over pastry, top with apple. Grate remaining pastry coarsely, sprinkle over apple. Sprinkle with extra sugar.
4.Bake for 10 minutes. Reduce heat to 180°C and bake a further 20 minutes or until golden brown. Cool in pan before cutting.
