Granola brunch board

Granola brunch board
  • 3 cup water
  • 1 cup honey
  • 1/4 cup lemon juice
  • 1 split, scraped vanilla bean
  • 4 yellow peaches, halved
  • 2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon mixed spice
  • 1/3 cup honey
  • 2 tablespoon canola oil
  • 1 cup mixed chopped nuts
  • 1/2 cup sliced dried figs
  • 1/4 cup craisins
Frozen mango whip
  • 2 cup frozen mango
  • 2 tablespoon lime juice

    In a large saucepan, combine water, honey, lemon juice and vanilla bean. Bring to boil on high. Reduce to low. Add peaches. Simmer, covered, for 15 minutes. Cool in liquid.

    Meanwhile, to make granola; on a lined oven tray, toss rolled oats, brown sugar and mixed spice with honey and canola oil. Bake at 180°C for 15 minutes, stirring once. Stir in nuts and figs. Bake for a further 5 minutes. Mix in craisins. Cool.

    To make mango whip; in a food processor, pulse frozen mango with lime juice until smooth.

    Serve with peaches, granola, yoghurt and fresh mixed berries.


Use nectarines instead of peaches, if preferred.
