Gourmet rocky road

The Woman's Day kitchen folk were skeptical. Can you improve on the classic rocky road? Are raspberry lollies really gourmet? The debate rages on. In the meantime, would you like to try one?

Gourmet rocky road
  • 300 gram mixed marshmallows, chopped
  • 1 cup raspberry lollies, halved
  • 1/2 cup pistachio kernels
  • 1/2 cup shredded coconut
  • 450 gram white chocolate, melted

    Lightly grease two 8 x 26cm bar pans. Line bases and sides with baking paper, leaving a 2cm overhang.

    In a large bowl, combine marshmallows, lollies, pistachios and coconut. Stir in chocolate, mixing well.

    Divide mixture between prepared pans, smoothing top. Chill until firm. Cut each log into 12 squares. Serve.
