Method

1.Drain tomatoes; reserve 2 tbsp of the oil.
2.Cut horizontal slits into chicken fillets, three-quarters of the way through, to make pockets.
3.Divide cheese, sage and tomatoes among pockets in chicken; wrap two slices of pancetta around each chicken breast.
4.In a heated oiled frying pan, cook chicken until cooked through.
5.Toss rocket with reserved oil; serve with thickly sliced chicken.
