Ingredients

Goat's cheese, avocado and smoked salmon cups
  • 24 slice white sandwich bread, crusts removed
  • 1/4 cup (60ml) light olive oil
  • 150 gram soft goat's cheese
  • 3 slice smoked salmon, diced
  • 1 firm ripe avocado, diced
  • squeeze of lime or lemon juice

Method

    Preheat oven to 190°C. Grease 2 x 12-hole mini-muffin pans.

    Roll out bread slices to flatten slightly. Cut 1 x 7cm circle from each slice, using a biscuit cutter. Brush with oil and gently press into prepared pans. Bake, 6-8 minutes, until crisp and golden. Cool on wire racks.

    Lightly mash goat's cheese and fold through salmon, avocado, and lime or lemon juice. Season to taste with black pepper. Spoon into bread cups just before serving.

Notes

Cups may be prepared ahead and stored in an airtight container, but they are best served warm.
