Goats cheese and zucchini flower quiches
- 12 baby zucchini with flowers (240g)
- 3 (sheets) shortcrust pastry
- 100 gram firm goats cheese, chopped finely
- 1/3 cup (25g) finely grated parmesan cheese
- 2 tablespoon finely chopped garlic chives
- quiche filling
- 300 millilitre cream
- 1/4 cup (60ml) milk
- 3 eggs
Method
Goats cheese and zucchini flower quiches
- 1Preheat oven to 200°C (180°C fan-forced). Grease 12-hole (⅓-cup/80ml) muffin pan.
- 2Remove flowers from zucchini; remove and discard stamens from flowers. Slice zucchini thinly.
- 3To make quiche filling; whisk ingredients in large jug.
- 4Cut twelve 9cm rounds from pastry; press into pan holes. Divide combined sliced zucchini, cheeses and chives into pastry cases; pour quiche filling into pastry cases. Top each quiche with a zucchini flower.
- 5Bake quiches about 25 minutes. Stand in pan 5 minutes before serving.
